Who has ever thought of eating alpaca before? I have to admit I hadn’t until last week when our CEO Wayne brought some fresh meat in for us all to try. I’ve been cooking professionally for 8 years now and not once has alpaca meat been in a walk-in cooler at work and I was thrilled to give it a whirl!
At first look the meat was a bright, beautiful red color and the aroma was spectacular, no hints of gaminess what so ever. The particular sample I choose to cook this week was an Italian sausage blend that our butcher had made. I whipped up a quick meal of fresh pasta with a spicy tomato sauce, topped with a wonderful peppronata which is a trio of red, yellow, and green bell peppers roasted with red onions and finished with fresh oregano.
The only word I have is wow. The meat was juicy but not greasy, really reminiscent of a lean cut of beef or buffalo. Our alpacas our completely grass fed and grass finished meaning the meat is an amazing source of the essential fatty acid Omega 3. Omega 3 fatty acids are essential to brain and body function and help lower the chance of heart disease. I am excited to have option of alpaca in my kitchen at home and hope to possibly bring our wonderful alpaca meat to a restaurant near you soon!
